"As far back as I can remember I devoured butter with abandon. Baked potatoes, English muffins, waffles swimming in melted butter...but my favorite way was in my mom's cookie dough. She used a wooden spoon to cream the butter and sugar, and I would steal bits of the salty sweetness. [...] To this day I am still in love with butter. I love it in vinaigrettes and oils. Brown butter adds a distinct nuttiness. Finish a pasta or sauce with a large dollop and look at it shine! Only butter gives that to you." – Chef Jeanie Roland
